New Year's Eve Lentil Soup

This lentil soup is rich, nourishing, and easy to prepare. Traditionally, lentils are believed to bring luck, therefore it is especially recommended on New Year's Eve.

Soup

  • 300 g lentils Added to
  • 100 g carrot Added to
  • 100 g celery Added to
  • 1 pc red onion Added to
  • 2 clove garlic Added to
  • 1 tapped ek marjoram Added to
  • 2 l water Added to
  • 1 pc bay leaf Added to
  • 1 moka spoon ground black pepper Added to

  • 1 tapped ek paprika Added to

1. Step

Soak the lentils the day before, then rinse them.

2. Step

Peel the vegetables and cut them into small cubes. Chop the onions finely.

3. Step

Slice the sausage or bacon and fry it in a larger pot. Add the onion and sauté until translucent.

4. Step

Put the vegetables, garlic, lentils, marjoram, bay leaf and pepper into a pot. Add enough water to cover it and bring it to a boil.

5. Step

Simmer the soup on low heat until the lentils are tender, about 30-40 minutes.

6. Step

In the meantime, toast the pieces of bread and sprinkle them with paprika.

7. Step

Serve the soup with toasted bread cubes, and serve it warm.
