Easy Curried Sausages in Slow Cooker

Ingredients
- 6 sausages
- 2 medium potatoes, peeled and cubed
- 2 medium carrots, peeled and sliced
- 1 large onion
- 2 cloves garlic, minced
- 1 can of diced tomatoes
- 1 Cup of stock
- 2 tablespoon of curry
- 1 tablespoon of paprika
- 1 teaspoon of cumin
- 1 tablespoon of olive oil
- Salt and pepper, to taste
- Fresh cilantro or parsley, for garnish

Directions
Heat the olive oil in a skillet over medium-high heat. Add the sausages and cook on all sides, for about 5 minutes. Transfer the sausages to the slow cooker.
In the same skillet, add the onion and garlic for 2-3 minutes till softened.
Add the curry powder, paprika, cumin, salt and pepper to the skillet and cook for another minute until fragrant.
Add the diced tomatoes and chicken stock to the skillet and stir.
Pour the mixture into the slow cooker over the sausages.
Add the potatoes and carrots to the slow cooker and stir to combine.
Cover the slow cooker and set to cook for 8 hours.
Once done, serve the curried sausages hot, garnished with cilantro or parsley.
