1. Step

1. To prepare the winter chestnut soup, first prepare shallots and chestnuts: Peel the shallots and cut them into fine cubes. Roughly chop the chestnuts.

2. Sauté the vegetables: Heat the butter in a large pot and fry the shallots until they are translucent. Add the chopped chestnuts and sauté them for a few minutes.

3. Cook soup: Pour the vegetable broth into the pot and let the soup simmer for 45 minutes.

4. Puree the soup: Take the pot off the stove and puree the soup with a hand blender until it is smooth.

5. Season and serve: Add the cream, Madeira, salt, pepper, and nutmeg to the chestnut soup and let the soup simmer for a few more minutes. Taste the chestnut soup and add more spices if needed. Serve the soup hot. Garnish with an extra spoonful of cream.
