Coffee cookies
These coffee cookies are perfect for any day when you want to treat yourself to something really special. With their strong aroma and delicious taste, they provide an incomparable taste experience. As a passionate coffee lover and amateur baker, I have made this recipe many times and have always noticed how well it goes down with family and friends.
Ingredients
- 1 Cup Butter (soft)
- 11⁄2 Cup sugar
- 1 egg
- 1 tablespoon vanilla essence
- 3 Tablespoon instant coffee powder
- 21⁄2 Cup flour
- 1⁄2 tablespoon baking soda
- 1⁄4 tablespoon salt
- Chocolate icing (optional)

Directions
To bake the coffee cookies, first preheat the oven to 180 degrees. Line two baking trays with baking paper. I found that the baking paper gave the cleanest and easiest result.
In a large bowl, beat the soft butter and sugar until the mixture is light and fluffy. Then add the egg, vanilla and instant coffee powder. The instant coffee gives the cookies their unique taste.
In a separate bowl, mix the flour, baking powder and salt and then slowly add to the butter mixture. Make sure that everything is well mixed.
Shape the dough and place on the prepared baking tray. Each cookie should have about 1 tablespoon of dough and enough space between them as they will expand during baking.
Bake the cookies for about 10-15 minutes or until golden brown around the edges. They may still seem a little soft in the center, but that's okay - they will harden as they cool.
Remove the coffee cookies from the oven and leave to cool on the tray for 5 minutes, then transfer to a wire rack to cool completely.
Optionally, the cooled coffee cookies can be coated with chocolate icing for an extra sweet kick.
