Christmas cupcake

I love the magic of Christmas, the smell of baked apples, cinnamon and cloves that permeates my entire home. Year after year, during the run-up to Christmas, I always return to this recipe.

1. Step

Cream the butter and sugar in a large bowl. It is important to take the butter out of the fridge in time to ensure that it is soft enough to cream.

2. Step

Add each egg to the butter, stirring constantly. Don't be alarmed if the paste sticks together, this is normal, it will become smooth again when the flour is added.

3. Step

Mix the flour with the baking powder and cinnamon and sift into the egg mixture. A useful recommendation for the flour for the plain dough is to sift it into the dough in batches.

4. Step

Add the raisins and grated orange zest and mix until smooth. The orange zest gives a subtle citrus flavour to the pasta, which harmonises well with the spices.

5. Step

Spoon the batter into muffin tins and bake at 180 degrees for 20-25 minutes. Always check the exact baking time with a pin test!

6. Step

When the cupcakes have cooled, make a thick but easy to spread glaze with icing sugar and a few drops of water to coat the tops of the cupcakes.
