Christmas cake pops

I tried this recipe for Christmas cake pops a few times in the run-up to Christmas to make them as lovely gifts for friends and family. Not only do they look festive, they taste delicious too! It's always fun to decorate them and you can let your creativity run wild.

For the cake:

  • 200 Gram sugar Added to
  • 200 Gram flour Added to
  • 4 Eggs Added to
  • 200 Gram softened butter Added to
  • 1 Teaspoon baking soda Added to
  • 1 Teaspoon vanilla essence Added to

For the glaze and decoration:

  • 200 Gram chocolate Added to
  • 50 Gram Coconut oil or palmin Added to
  • Various sprinkles and Christmas decorations Added to
  • 24 Lollipop sticks Added to

1. Step

To make your own Christmas cake pops, start by making the cake. Beat the butter and sugar in a bowl until fluffy. This should take about 2 minutes until a light and fluffy mixture is formed. This consistency is important as it makes the cake juicier later on.

2. Step

Add the eggs one at a time, making sure that each egg is well mixed in before adding the next. Add the vanilla extract and stir well.

3. Step

In another bowl, mix together the flour and baking powder. These dry ingredients should be slowly added to the egg mixture and gently folded in to ensure the cake is fluffy and light.

4. Step

Pour the batter into a greased cake tin and bake in a preheated oven at 180 degrees Celsius for about 20 minutes, or until a toothpick inserted comes out clean. Be careful not to overbake the cake!

5. Step

After the cake has cooled, crush it into a crumbly texture and form small balls. This might be a bit of a sticky business, but freezing the balls for 20 minutes will make it much easier.

6. Step

In the meantime, melt the chocolate and coconut oil and allow to cool to a suitable temperature. Dip the end of the lollipop sticks into the chocolate and then stick them into the cool cake balls. Then chill the cake pops again so that the chocolate sets and holds the sticks in place.

7. Step

Now comes the most fun part - the decoration! Dip the cake pops in the chocolate and then decorate them with sprinkles or whatever you like. This should happen fairly quickly as the chocolate dries quickly. Then leave the cake pops to dry on a stand or tray.
