Directions
Preheat your oven to 200 degrees C (400 degrees F) and lightly grease a large casserole dish.
Cook the gnocchi according to package instructions until they are just tender. Once cooked, drain and set aside.
Meanwhile, in a large saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic and cook until they start to soften.
Stir in the crushed tomatoes, dried basil, dried oregano, and salt and pepper to taste. Allow it to simmer for about 10 minutes.
Add the cooked gnocchi and fresh chopped basil to the sauce, then toss until the gnocchi are evenly coated in the sauce.
Transfer half of the gnocchi and sauce mixture into the prepared casserole dish.
Sprinkle half of the shredded mozzarella and grated parmesan cheese evenly over the gnocchi.
Repeat with the remaining gnocchi and sauce, and sprinkle the rest of the cheese over the top.
Bake in the preheated oven for about 20-25 minutes, or until the cheese is melted and bubbly and slightly golden around the edges.
Allow it to cool for a few minutes before serving. If desired, garnish with fresh basil leaves.
