Simple Marinated Prawns

  • 500 g large raw prawns, shell on. Added to

1. Step

Start by cleaning the prawns - it's best to leave the shells on as they add a profound depth of flavor to the dish. However, if you wish, you can remove the shells but be sure to leave the tail intact for presentation.

In a large bowl, add the cleaned prawns, finely chopped garlic and chili, fine sea salt, olive oil, and the zest and juice of one large lemon. It's crucial to zest the lemon before juicing - it's much easier that way!

Mix all the ingredients well making sure that each prawn is coated in the marinade. Cover the bowl with cling film and leave it in the fridge for 30 minutes to marinate - don't rush this process, as it allows the prawns to absorb all the flavors.

Once marinated, you can either grill, barbecue or simply pan fry the prawns until they turn pink and are cooked through. This usually takes 3-4 minutes on each side - but be careful not to overcook, as prawns can quickly become rubbery.

5. Step

Transfer the prawns to a serving dish, sprinkle with the freshly chopped parsley, and serve immediately. Marinated prawns are best served shelled at the table for people to unpeel and enjoy. Pair with a cool glass of white wine and fresh lemon wedges for an extra tang.
